The American diet tends to be deficient in omega-3 fatty acids. Omega-3 fatty acids are very important for the health of your brain, nervous system and for numerous biochemical processes including those that protect against heart disease and cancer.  Fat coming from grass-fed animals is richer in omega-3 fatty acids than fat coming from animals who were raised in feedlots.
