Yesterday, Trent and I drove up to Muenster, Texas. Muenster is about 20 mile due west of Gainesville, Texas. We wanted to sit down and talk with two of the meat processors we are considering using to process & age our beef. We took a copy of our USDA SVS Grass Fed Certification, a couple of possible 2S Ranch label sketchs and other pertinent documentation. Both of these skilled processing companies we met with have high standards, come with great references and are excited about possibly processing 2S Ranch beef. We also met and had a great talk with the USDA meat inspector for the region. A good relationship between rancher and processor is critical in getting quality beef to market. There is alot of coordination between scheduling processing and pick-up dates, customization of the beef cuts, and meat wrapping specification. Did I also mention we are planning to sell beef bones in The Provision House? Trent talked to Penny Fischer about sizing the bones for us. Yes, we have folks specifically interested in purchasing grass fed cattle bones. Trent is in charge of our meat processor relationships. No doubt, he'll be spending alot of time in Muenster.
