The Mesquite Tree Saga Continued

After the headache of clearing out hundreds of mesquite trees on the ranch we began to wonder if there is actually a good use for them... and sure enough there is! The bean pods of the mesquite trees can be dried and ground into mesquite powder (also known as mesquite meal). This was done by the plains indians for centuries. The mesquite powder has a sweet, nutty, caramel-like, molasses taste. It can be used as flour or as a sweetener. After doing a little research we learned that there are quite a few health benefits to using mesquite powder in your diet. Here are just a few:

1. High in protein and fiber
2. Gluten Free
3. A good source of calcium, iron, manganese, zinc, potassium and the amino acid: lysine.

Mesquite powder can be used in smoothies, shakes, raw or cooked desserts and stirred into food/drinks for extra flavor. Because the powder has such a sweet taste you can cut the amount of sugar you use when cooking, which is always a good thing! Who knew that we had such a great thing growing around our ranch after all?!?
